3 Delicious and Healthy Treats to Serve Poolside this Labor Day Weekend

Happy Labor Day Weekend, y'all! Whether you're going to relax with your toes in the sand or planning a stay-cation, these treats are an awesome addition to your menu. Add our party punch and finger foods to your festivities for some healthy noshing. They will be the life of your party and they each take less than half an hour!

Let's start with a bang! (Or a punch!)

Watermelon Açai Limeade Punch Bowl

Total Time: Less than 15 minutes | Serves: 6 to 8

You will need:
1 seedless watermelon
14 oz. Veev Açai Spirit or similar
12 oz. Limeade (we used Trader Joe's brand)
Limes and blueberries for garnish
and One or two pairs of clean hands!!

1. Find the flattest side of your watermelon or slice part off to create a flat surface. This will be the bottom of your punch bowl. For the top, slice off a thin piece to create an opening.
2. Dig out the insides of the watermelon! This part is messy, but so fun.
3. Put the blood and guts flesh and juice into a blender and blend until smooth. Strain out any seeds or pulpy bits.
4. Combine the Veev, 30 ounces of watermelon juice, and limeade into a pitcher and chill.
5. Fill your watermelon with a handful of ice, pour in your beverage, and garnish with sliced limes and blueberries. (I used frozen blueberries to make the drink colder)
6. Stick some straws in it and serve poolside.

This drink is delicious and sneakily strong. Definitely grab an Uber after enjoying, okay?

And now on to some finger foods to whet your palette before you grill and chill.

Minty Cucumber and Avocado Salad

Total Time: About 30 minutes | Serves: 2-4

You will need:
2 cups chopped cucumber
2 ripe avocados
1/4 - 1/2 cup fresh feta to taste (We prefer in brine!)
1/2 cup freshly chopped mint
2 tbsp freshly squeezed lime juice
2 tbsp extra virgin olive oil
A few pinches of salt

1. Peel and chop cucumber. I cut mine into disks and then halved them.
2. Put chopped cucumber into a colander and sprinkle with salt. Let strain for 20 minutes.
3. Chunk avocado into bite sized pieces and, in a large bowl, cover with 1 tablespoon lime juice. Let sit.
4. In a small bowl, mix the olive oil and remaining lime juice.
5. Finely chop mint.
6. Cube the feta cheese into bite sized pieces.
6. Add the cucumber, feta, mint, and olive oil mixture to the bowl with the avocado and toss it up.
7. Transfer to a service bowl, if you please. Can you ever have too many bowls?

Impress your friends and family with this restaurant-quality deliciousness.

Buffalo Cauliflower Bites

Total Time: About 30 minutes | Serves: 2 to 4

You will need:
6 cups cauliflower florets
1/2 cup dijon mustard
1/4 cup ketchup
1/4 cup Trader Joe's Jalapeño Pepper Hot Sauce (or your other unsweetened favorite!)
1 tbsp garlic powder
1 tbsp butter
A pinch of salt and pepper

1. Preheat oven to 450 degrees Fahrenheit.
2. Lightly grease a cookie sheet with olive oil. (I accidentally put the cauliflower on the cookie sheet instead of a bowl at first. Oops.)
3. In a small bowl, melt the butter. Add in the dijon mustard, ketchup, and hot sauce, as well as the garlic powder, salt, and pepper. Stir it up!
4. In a large bowl or freezer bag, combine the cauliflower and sauce mixture, coating the cauliflower florets evenly.
5. Plop the cauliflower onto your cookie sheet and into the oven.
6. Cook for 20 minutes.
7. Remove from oven and enjoy these tasty, almost guilt-free bites of heaven.

Seriously addicting! If you really want to go an even healthier route, swap the ketchup for tomato paste. Lauren made up this sauce recipe and it is diviiiiiine.
